### UHT Sterilizer Overview
#### **Purpose:**
UHT sterilizers are designed for sterilizing, preventing mold, and preserving various food and pharmaceutical products, including powdered, granular, flake, or gelled items. They are commonly used for products like cake and mooncake sterilization equipment.
#### **Sterilization Principle:**
- **Process:** Materials are heated in a continuous flow state to 138–150°C using a shell-and-tube heat exchanger, maintained for 2–4 seconds, and then rapidly cooled.
- **Effect:** Achieves commercial sterility, killing microorganisms and spores while preserving flavor and nutrients.
- **Advantages:** Ensures aseptic filling, prevents contamination, and significantly extends shelf life.
#### **Working Principle:**
- **Preheating:** Material is preheated using a centrifugal pump and passed through a hot and cold heat exchanger.
- **Sterilization:** Rapidly heated to sterilization temperature (138–150°C) and held for approximately 3 seconds in a high-pressure, high-temperature barrel.
- **Cooling:** Material is then cooled and prepared for aseptic packaging.
### Stainless Steel Reactor Maintenance
1. **Inspection and Cleaning:**
- Inspect reactor blanks and ensure proper allowances before processing.
- Clean the reactor surfaces to prevent rust and contamination.
2. **Scale Removal:**
- **Pickling:** Use a 60°C pickling solution (81.0% formic acid, 17.0% water, 1.2% buffer, 0.8% surfactant) for 2 hours of static immersion followed by 3–4 hours of circulation.
- **Passivation:** Treat the reactor surface after pickling to prevent corrosion.
3. **Specific Cleaning Steps:**
- Flush the reactor to remove impurities.
- Perform acid cleaning and alkaline cleaning sequentially.
- Rinse thoroughly with softened water and record all cleaning steps for verification.
