### Steps for Making Compound Fruit and Vegetable Juice Using a Mortar Grinder

1. **Ingredient Selection and Processing**:

- Select fresh, high-quality vegetables such as tomatoes, winter melons, carrots, lettuce, celery, and spinach.

- Ensure the vegetables are free from insects, mold, or foreign matter.

- Clean the vegetables thoroughly and crush them in a mortar grinder.

- Steam the crushed vegetables in a steamer until they reach a temperature of 70-90°C.

2. **Juicing and Processing**:

- Extract the juice from the processed vegetables using a blender with 3mm and 5mm meshes.

- Mix the juices in a ratio of 70% tomato juice and 30% juice from the other vegetables (winter melon, carrots, celery, lettuce, and spinach).

- Add bran pulp to the mixture until the sugar content reaches 8-10% and adjust the acidity to approximately 0.3%.

- Grind the mixture using a mill and filter it once to ensure a smooth consistency.

3. **Deaeration and Packaging**:

- Heat the vegetable juice to 80°C and homogenize it under 180-200 atmospheres of pressure to ensure a uniform and transparent juice.

- Sterilize the juice using high-temperature flash sterilization (120-135°C for 10 seconds).

- Bottle the juice while it is still hot (above 75°C), seal it, and cool it in stages.

- Alternatively, sterilize the bottled juice in boiling water for 10-15 minutes and then cool it gradually.

The roller mill used in this process is made of stainless steel or semi-stainless steel rollers. It operates by passing fluid or semi-fluid materials between high-speed, interlocking rollers, which subject the materials to strong shear forces, friction, and high-frequency vibration. This process effectively pulverizes, emulsifies, homogenizes, and blends the materials, resulting in a high-quality finished product.
