**Cooling Fermentation Tanks: Features and Working Principles**

Cooling fermentation tanks are designed for sterile and contamination-free fermentation processes, commonly used in dairy and alcoholic beverage production. These tanks are equipped with advanced aseptic systems to prevent microbial contamination, ensuring product purity and extended shelf life.

### **Key Features:**

1. **Capacity:** Available in sizes ranging from 300 to 15,000 liters.

2. **Aseptic System:** Includes aseptic breathing vents or a positive pressure fermentation system to block airborne microbial contamination.

3. **Heat Transfer:** Equipped with Milo plates or labyrinth-style jackets for efficient circulation of heating or cooling media.

4. **Material Resistance:** Resistant to acids, alkalis, and corrosion, ensuring durability and ease of maintenance.

5. **Energy Efficiency:** Designed for rapid heat transfer and adaptability to large temperature fluctuations.

6. **Ease of Use:** Features easy cleaning and operation, enhancing productivity.

### **Working Principle:**

Cooling fermentation tanks support three types of fermentation processes:

1. **Solid-State Fermentation:**

- Utilizes starch-containing raw materials like potato starch or starch meals.

- The culture medium is cooked, cooled, and inoculated with seed koji, then fermented under controlled temperature and humidity.

2. **Liquid-State Fermentation:**

- Employs molasses as the raw material.

- Sterilized culture medium is transferred to fermentation trays, inoculated with bacterial strains, and supplemented with sugar solutions as the biofilm forms.

- Requires sterile air throughout the process.

3. **Submerged Fermentation:**

- Primarily used for producing citric acid.

- Microorganisms grow and ferment in a sealed fermentation tank equipped with essential components such as agitators, cooling devices, air distribution systems, and defoamers.

These tanks are versatile and cater to various fermentation needs, ensuring high-quality and efficient production processes.

Each tank is crafted from premium-grade stainless steel, ensuring exceptional corrosion resistance, hygiene, and longevity.
